I need to be able to have 2 options on the screen for the customer to choose from, i.e. Guilty or Not Guilty. How do I do that? I have generated them both. But I don't see how to have them both on the start screen for choosing.

Do you mean to select a photo layout?

I just updated my software to the latest version. And I do not get the
option to choose the number of layouts. I can either check or uncheck

You need to enable "Use Start Screens"

Thank you. It works, but why don't I have the option to select quantity of
    layouts?

While I have you for a minute. I have one of my license token used on my
original lap top that I don't have anymore. And we have 2 Iclicks now. One
has Sparkbooth and the other does not. But we have used our 3 tokens. Can
I transfer 1 license token to use on the new Iclick or do I need to buy a
    new one?

What version are you running? The number of layouts to display is in the
    most recent version.

I think you mean "activations"? See
    http://help.sparkbooth.com/kb/activating-and-licensing/deactivate-install

You can reset your activations too. See
